Mashed potatoes are one of those satisfying foods that we wish we could somehow magically make low-calorie without sacrificing the taste and satisfaction. Well with our Parmesan Garlic Cauliflower Mash you can enjoy all the great taste and while dropping nearly 50% of the calories of a comparable mashed potato recipe! This is definitely one of our favorite healthy food recipes since it goes well with so many meals.

What makes this healthy side dish recipe even better is that it only takes a few ingredients and 15 minutes to make!

Parmesan Garlic Cauliflower Mash

–PART 1: Ingredients: Makes 4 Servings

1 – Large Cauliflower Head
3 TBSP – Light Butter
¾ TBSP – Minced Garlic
4 TBSP – Grated Parmesan Cheese
4 TBSP – Fat Free Cream Cheese
¼ Cup – Chicken Stock
¾ TSP – Black Pepper

We currently use a blender when making this recipe but a food processor would be much more suited to this recipe. Once we find a food processor worth recommending we will list it for you.

To start off go to your local grocery store and find yourself a large cauliflower head. Once we cut the cauliflower off its stem and cut off unnecessary pieces we’re usually left with a total weight of edible cauliflower weighing about ~770g. If your total weight of edible cauliflower is between 700-850g this recipe’s proportions should work well.

Next up we add in some ingredients that we would normally use to make mashed potatoes plus some additional for flavoring and you got a tasty cauliflower mash. This is one of our healthy food recipes that we recommend to go as a side to many of our recipes.

–PART 3: Cooking Instructions

First begin by filling a large pot approximately 3/4 of the way full with water and begin to bring the water to a boil.

Next take your cauliflower and begin to cut off the stem and then once the stem is removed cut the cauliflower head into florets. For additional information on cutting a cauliflower there are some good instructional videos on YouTube.

Once the cauliflower is cut into florets and the water is boiling place the cauliflower in the pot and cover and allow to cook for 10 minutes. After the cauliflower is cooked remove it from the pot by using a large strainer and then pat dry with multiple paper towels (If not sufficiently dried the end result can come out mush and more bland).

Add all the ingredients aside the cauliflower to your food processor/blender and then begin adding the cauliflower a few florets at a time and blending to make sure you achieve an even consistency. Keep doing this until you have added all the cauliflower and finish once you achieve a “puree” like consistency.

Your cauliflower mash is now finished and ready to serve or be stored in a large tupperware. This recipe makes 4 servings.
