Healthy Dessert Recipes - Pumpkin Pie! A treat for the whole family any time of year. This healthy dessert recipe is so simple and tastes amazing no one would ever think that it was a healthy low calorie recipe. Most pumpkin pies come out to about 350 calories per slice (1/8)! This recipe is less than 150 calories per slice, which is less than half the calories!

Skipping out on the calorie dense crust isn’t just what makes this recipe better, but improved ingredients such as light/fat free choices with some added egg whites packs this pumpkin pie with plenty of nutrients. This is one of our healthy dessert recipes that the whole family will enjoy all year round.

Crustless Pumpkin Pie

–PART 1: Ingredients: Makes 8 Servings

1 Can 15 oz. – Pumpkin (Libby’s or Store brand)
2 – Whole Large Eggs
8 oz. – Fat Free Cream Cheese
1 Cup – Egg Whites
1/2 Cup – Splenda Brown Sugar
1 TBSP – Light Butter (We prefer Smart Balance Light)
1/2 TBSP – Pumpkin Pie Spice
1 Tsp. – Vanilla Extract
1/2 Tsp. – Cinnamon

To start we highly recommend getting a good quality toaster oven. Having an adequate size toaster oven helps save money by helping reduce power used. A toaster oven also greatly reduces the time it takes to preheat the oven as they are much smaller than a full size oven. For suggestions refer to our product review section for our current recommendation. (Still in Development)

Making pumpkin pie is fairly simple so we try not to overcomplicate it. Get some pumpkin, a few ingredients and the right amount of spices and mix together and you’ve got yourself an amazing healthy dessert recipe for the whole family. Most recipes use milk but we find the taste to be as good or better and much healthier with some added protein from additional egg whites.

Healthy dessert recipes require the right balance of low calorie ingredients while maintaining the sweetness we all crave in our desserts. That’s why we use the Brown Sugar Splenda mix to help us achieve that great sweet taste with only half the calories. Add in a little vanilla extract, some pumpkin spice and a dash of cinnamon and you would never know that you could eat 1/4 of the entire pie for a little less calories than some fast food single cheeseburgers!

–PART 3: Cooking Instructions

-First begin by preheating your toaster oven to 350 degrees F° on bake.

-Remove the cream cheese from the refrigerator and allow it to sit until it reaches room temperature or microwave for 15-20 seconds. When the cream cheese is at room temperature beat it with an electric mixer until smooth.

-Add in the remaining ingredients and beat/mix them until you have an even consistency.

-Pour the ingredients into your pie dish and bake at 350 degrees F° for 50 minutes. You can check to know your pie is done when you stick a toothpick/knife into the middle and it comes out clean.

-Put the pie in the refrigerator and let it cool before serving.
