Healthy Dinner Recipes - Shepherd’s Pie is one of those healthy dishes guaranteed to leave you feeling satisfied afterwards. With the right ingredients we can turn what would be a very calorie-heavy meal into a low calorie, nutrient packed dish!

We utilize our Parmesan Garlic Cauliflower Mash instead of the typical fattening, calorie-heavy mashed potatoes in combination with plenty of vegetables and lean ground beef to create one of our favorite healthy dinner recipes.

Healthy Shepherd’s Pie

–PART 1: Ingredients: Makes 8 Servings

1.5 Lbs. (24oz.) – 93% Lean Ground Beef
½ TBSP – Olive Oil
¾ Medium – Onion Diced
8 Oz – Mushrooms Diced
1 Stalk – Celery Chopped (Small Pieces)
12 Oz – Frozen Mixed Vegetables (Carrots, Green Beans, Corn, Peas)
2 Tsp – Minced Garlic
2 TBSP – Flour
1 ¼ Cup – Beef Broth, Fat Free (Low Sodium Preferrable)
1 TBSP – Tomato Paste

We all know shepherd’s pie is an amazing dish and one of everyone’s favorite healthy dinner recipes but it is packed with tons of calories with the biggest amount coming from the “meat” and the “topping”. To reduce the calories greatly we replace the normal mashed potato topping with our very own low calorie and healthy Cauliflower Mash recipe! With less than half the calories of your typical shepherd’s pie topping and tons more nutrients, cauliflower mash “faux potatoes” are the perfect solution! Next is the “meat” which we stick with lean ground beef, 93% to be exact. Some stores carry leaner cuts such as 95% and even 97% but for most people it is hard to find and sometimes exponentially more expensive so we stick with 93%. Other alternatives can be ground turkey or even ground chicken if that is your preference, though we have never tried our recipe with turkey nor chicken. When it comes to healthy dinner recipes such as these, remember the choice is always yours to spin it the way you like!

Last but not least we toss in all the essential vegetables packing tons of nutrients to keep you and your family healthy! It is possible to add some extra spices during the cooking process but we choose to keep things as simple as possible since we believe the ingredients add enough flavor as is.

Our Healthy Shepherd’s Pie Recipe Mixture

–PART 3: Cooking Instructions

First begin by making your cauliflower mash topping. Instructions at Parmesan Garlic Cauliflower Mash Recipe

Preheat your oven to 400 F°.

In your large pan brown ground beef over medium high heat.

Once browned drain the fat from the ground beef and set the beef aside.

In your pan add the oil, minced garlic, onions, mushrooms, and celery and sauté for 6 minutes.

Reduce heat to medium and the flour and mix well. After mixing add the frozen vegetables, tomato paste, beef broth, ground beef and mix. After mixing cook on medium heat for 7 minutes.

Take the mixture and spread evenly in your 13×11 baking dish. Afterwards take your Cauliflower Mash and spread evenly over the top of the meat mixture.

Put the baking dish in the oven and let it cook for 20-25 minutes to brown the topping slightly.

*If you choose to cut the Shepherds Pie into individual servings and store in tupperware put them in the microwave with the lid loosely on top for 2 minutes when reheating.*
