Looking for a simple yet healthy breakfast meal that includes everyone’s favorites? Yes we’re talking about sausage, eggs, cheese, peppers, and potatoes!

This healthy breakfast recipe came about when trying to make an all-around perfect encompassing healthy breakfast recipe. Throw all your favorites together in the right amounts and enjoy an amazing healthy breakfast. Remember we don’t have to sacrifice taste with this great healthy recipe.

Breakfast Scramble

Without further a due here is our Breakfast Scramble from our healthy breakfast recipes collection.

–PART 1: Ingredients: Makes 4 Servings

1 Large (30oz.) – Egg Beaters Southwestern Style
2 – Whole Large Eggs
2 Links – Johnsonville 3 Cheese Chicken Sausage Links (*Sold in 4 Link Packs*)
¾ Cup – Kraft 2% Reduced Fat Shredded Mexican Cheese (*Can be bought in as small as 7 oz. bag*)
1 Lb. (16oz.) – Russet Potato(es)
1 TBSP. – Olive Oil

Whisk, Spatula, Large Bowl, Large Stovetop Pan

To start we highly recommend getting a good quality toaster oven. Having an adequate size toaster oven helps save money by helping reduce power used. A toaster oven also greatly reduces the time it takes to preheat the oven as they are much smaller than a full size oven. For suggestions refer to our product review section for our current recommendation. (Still in Development)

When making healthy breakfast recipes we try to use low calorie alternatives to help achieve our goals.

To start off we chose Southwestern Style Egg Beaters as our main base for our ingredient due to the fact it is nearly all protein! Egg Beaters have no fat like normal eggs nor do they have any cholesterol, which is the biggest downside of whole eggs. But let’s not forget all the important nutrients found in eggs such as omega-3 fatty acids, vitamins, and minerals. This is why we chose to add in two whole large eggs to not only help with taste and consistency, but also to add important nutrients into our meal. Remember like most things in life moderation is key especially in weight loss!

For this healthy recipe the sausage component we chose was Johnsonville Chicken Sausage Links. We chose chicken over beef/pork due to the much lower fat content and lower sodium count. These sausage links are also made from chicken raised without added hormones making for a great addition to our healthy breakfast recipes collection.

Next up in our recipe we use russet potatoes to add that great home fries taste but instead bake the potato squares as to avoid all that fatty oil you would get frying them in a pan. And to finish off we use 2% reduced fat shredded Mexican cheese for additional taste that kids will love too. Hopefully all this information will help you appreciate our Breakfast Scramble from our healthy food recipes even more!

–PART 3: Cooking Instructions

-First begin by preheating your toaster oven to 425 degrees F° on bake.

-Take your potato, or potatoes if you bought multiple small ones, and cut the potato in half long ways and then once more long ways. Take each of these 4 long pieces and start cutting potatoes into ½ inch thick squares.

-Place potatoes in tupperware and pour 1 TBSP of olive oil over potatoes. Cover tuppperware with lid tightly and shake vigorously for 30 seconds to cover potatoes with olive oil. Spray toaster oven tray with no-stick spray and then take potatoes and place on toaster oven tray and put in toaster oven once finished preheating for 30 minutes.

-Take the carton of Egg Beaters and pour into a large bowl. Crack both eggs into the large bowl. Whisk Egg Beaters and eggs together till smooth consistency. Spray no-stick spray onto large stovetop pan and pour eggs into the pan and turn the heat setting to high. Cook for 8-10 minutes and then turn off heat and cook for an additional 1-2 minutes, during the cooking use your spatula to break up the eggs into scrambled eggs. Separate eggs evenly into the four tupperware containers.

-Take 2 of the chicken sausage links and slice them into ½ pieces. Evenly divide up the sausage pieces amongst the 4 containers. *If you intend on eating one of your meals right away heat up the chicken sausage for approximately 1 Minute & 30 Seconds.*

-Once potatoes are finished cooking evenly divide the potatoes amongst the 4 containers.

-Finish off the meals by dividing up the cheese on top of the food in the 4 containers and keep refrigerated.

*When heating the meals put them in the microwave with the lid loosely on top and set to heat for 1 Minute & 50 seconds.*

*If you plan on eating the meals right away don’t forget to heat up the chicken sausage*
